From my understanding this is also how cloudflare bot protection has worked for a long time, and then they look for entropy in user input to confirm the user is human. Also how recaptcha without images works.
you keep the model. it's never deprecated. with closed ai, you are forced into a new more expensive model every few months. if an open model infra provider does that, you simply switch to another one. it's not in their interest to do that.
what assures you they would be cheaper? they have already proven people can pay a higher price so why not charge more? this won't be enforced worldwide people would just switch platforms to one that isn't in a jurisdiction where ads are banned
