Cool project! It may be of limited use for detecting suspicious behavior because these smart speakers like to download firmware updates in the background whenever they please, so you wouldn't be able to tell if the light is going off because the speaker is uploading a recording of your private conversation, or if the light is going off because Google decided that the sound that plays when timers go off needs to change. However, it's nice to have some insight into when the device is phoning home.
Thanks! True that I can't say what it is doing when talking to the cloud since the traffic is encrypted...but I do still think a lot of people would be interested in knowing when it is talking to the cloud.
