And the ad industry has been greatly encouraging applications and websites to have user accounts specifically as a way to work around the decreased ability to track people.
It's why I've adopted the policy of not signing up for accounts with anything unless the application or service is one I literally can't do without. Fortunately, the number of things that qualify as genuinely mandatory is within a rounding error of zero.

Like does it really matter if you get an account or not, when you're already providing all your PII for the ticket?

I never make an account anymore for things like travel booking. My experience has been that signing up for an account will result in a lot more spam than checking out as guest.
OK, will have in mind to provide such a escape hatch to privacy conscious customers, but a company doing this right would just enable you to disable all subscriptions...

My assumption is that signing up results in more spam even though the company has my email address either way because the act of signing up puts me in a demographic that tends to respond better to unsolicited emails -- so the company makes more from selling my data when I've made an account.
But it's only an assumption.

Indeed, and this is a real problem I've encountered in my own business ventures. It doesn't take that many people to pee in the pool before others start getting hesitant about swimming.
But we have to find a way to operate in the world as it exists, not as we wish it exists.

Used my phone's "Hide my identity" feature for the first time to sign up for a relatively well-known service.
Now I'm forever known to everyone on that service as an unintelligible string, since their login flow freezes the name you give them on signup, so I couldnt even fix it if I enjoyed the service.
