The lack of nutrition plays.
Impossible meat, for example, is extremely processed and generally much worse than red meat. But, it doesn't require killing a cow to acquire.
I wonder if this is more appropriate for reducing food insecurity rather than replacing organic, etc.

If the nutritional value of a plant's output is governed by its genetics, then this should be a solvable problem.

With this I'm a bit worried that the food would be the same calories but would be ultimately less nutritious. This is one of the theories of rising obesity, where modern food is up to 70% deleted of micro-nutrients so we need to eat more to feel satiated.
