I find these videos where a person just dedicated months/years to a single subject and condensed it down to hours to be amongst the most interesting.

I’m not sure how profitable long videos like this are for the creator. Does YouTube count my minutes watched at half when I watch at 2x? And one big video is almost certainly not going to be the same as lots of small videos. I feel like her channel in particular is more of a funnel to subscribe to her Patreon for more frequent content.
Creators usually get paid by ads as well. Its been a long time since I've seen an ad on YouTube thanks to adblock, but a longer video you can fit more ads into.

You really need to pay to skip the adds though.
Then you could rephrase it as "millions of people are watching TV several hours a day" Are they watching the TV, or just having it switched on while doing other chores so there is no "silence" when they will occasionally stop?
