We are currently working on our robotic kitchen and have our prototype up and running in Berlin. You are right, there are many advantages for a concept like this.
We decided to use robotic arms for our product. They bring quite some flexibility and they are easily programmable.
Regarding the dispensers I can confirm that there is some complexity. Especially when you want to dispense different kinds of food without making tradeoffs with the quality and reliability.
