Shopify's growth model relies on bringing people into an app dependent ecosystem. They're not looking to be a one app company. They want users to locked into having many Shopify apps. When people are using mobile sites, the sense of dependency just isn't there. Not to mention it feels terribly inconvenient and the tracking can be stymied.
