Nothing to add to that list but to name some of what I have: Nextcloud, KeePass, Plex, Octoprint, qbittorrent.
unbound + void-zones-tools: caching dns w/adblocking (including properly configured DoT so phones don't whine about it, which I couldn't get working with adguard/pihole) and some vanity domain stuff. Unbound is an absolute breath of fresh air after years and years of goddamn BIND
transmission-daemon: ime, the most stable headless client when talking hundreds of Ts. Also has a great RPC interface so stuff like custom RSS integrations are easy to roll
restic ("self-hosted" is arguable but close enough): encrypted incremental snapshot-based backup that just werks; most of my stuff backs up to some of my other stuff, and that stuff gets shuffled off to b2
nginx + nginx-rtmp-module + a bunch of spaghetti Flask: private twitch.tv clone
znc: still going strong and it's been fun seeing some of my circles rotate back to irc, a decade+ later
