This is an interesting project but there are two sticking points for me:
1. Given the option, I would rather have NTFS access so I wouldn't have to rely on an external disk to store documents created on it, especially if I considered them particularly sensitive.
2. Are all the included programs truly freeware? I see they have been found on official sources online, but that doesn't always guarantee that the company behind them intended for them to be used as freeware.

What is the benefit of DOS over a Linux live CD, with wifi and notifications disabled?
There is a Win98 x86 retro portable new laptop available to buy in some websites. I wonder if this could work in that computer making it some nice portable typing machine - although I don't remember if the keyboard in those laptop are ok to type or not.
If you're referencing the $200 laptop I'm thinking of, it doesn't review well[0]. Personally, I would rather search out retro hardware that would be considered high-end for its time, compared to devices that brand themselves as retro but tend to use cheap components both inside and out.

I think they are way too small for like any comfortable typing, maybe not for very small hands perhaps.
GrandView is a fantastic outlining program! I think it’s a great idea to have it installed.
