Apple will never open iOS, although they may "open" it. They've spent half a decade refining the protections and hardware/software against jailbreaks, they're not just about to throw away all that infrastructure.
How does your statement have anything to do with Apple not stifling innovation? Because you pay Apple to vet your UI... what? Somehow innovation is fostered for you?...
What a ridiculous stance. C is a low level language and if you don't feel comfortable with low level tools, that doesn't make it the fault of the tool itself. Just because you don't feel comfortable with that much power doesn't mean that there's anything wrong with having it.
