Would it not make sense to re-use the circulatory, filtration, energy production, digestive, and excretory systems that evolved over millions of years to locomote chicken flesh, rather than try to re-engineer these systems? The ENTIRE point of the story is that industrial meat farmers raise a breed of chicken which has been engineered to only live a short lifespan before consumption. Laying hens are a completely different breed, so your mother's experience is not relevant.
That depends entirely on your groundwater. In Florida, absolutely, it tastes like shit. When I lived in New York, it was great. Reservoir water, of course, is full of literal shit. Fish shit, birdshit, human waste runoff, etc, which all must be removed by a treatment system prior to use.
