The Thing. Probably part of the reason why it'd be a dream job for me to work in Antarctica.
Watched it again last week. Then another time with the director's commentary (commentary can be found on youtube, audio only). The fun thing is that Kurt Russel is usually there with Carpenter: They have a drink, tell stories about the shooting and have a good time.
From the top of my mind that movie is "Terminator 2".
Runners-up: "Scent of a woman" and "The talented Mr. Ripley". Several Woody Allen movies are worth to revisit. "Deliverance" and "Pulp fiction" also.

Pulp Fiction. The combination of the upbeat music and memorable dialogue used to make me rewatch it at least once a month, as a feel good movie. I've since dialled it down but will still occasionally watch parts of it.
The funny thing is the first time I saw it I didn't like it all due to it's mixed-up order of story telling and, once you put it all together, fairly mundane plot. It was over time that I realised the plot is not really what you watch it for but you watch it for the overdrawn, yet interesting, character interactions in combination with the music and general vibe.

Airplane (aka 'Flying High').
Every time I watch it I see yet another sight-gag or 'get' another joke.
Excellent writers, they had jokes within jokes, even. One of the best writing teams ever.

Did you know Airplane was a remake of an earlier film ‘Zero Hour’? Most impressively, Zero Hour was a serious film that had a script adjusted and combined with directing, acting, and visual gags to create this comedic masterpiece.

Porco Rosso, The Wind Rises, My Neighbor Totoro, Kiki's Delivery Service. The Ghibli films keep me coming back.
Barton Fink. Weirdly inspiring, and tells a story like almost no movie I have seen before and after.
