What helped me is to stop paying for AI subscriptions, as well as removing any AI editor from VSCode. It's rather hard at the beginning, but once you realize how much fun you've been missing all this time, it's easy to keep going. Of course, once in a while when I'm really stuck and I can ask ChatGPT for a hint, but only for learning purposes. I feel like not using AI at all is not a good idea because it's definitely not going anywhere. It might save some time occasionally for really boring stuff, but I think we shouldn't use it for more than 20% of our coding time. It only leads to deterioration of our cognitive abilites that we worked so hard to acquire. Good luck.

I noticed that almost every blog website that shows up when you search for something writes AI-generated content these days. I literally have to add "reddit" at the end to find some old answer a real human has written.

I feel you bro, we're in the same boat. I used AI for most of my coding (especially for a job) and writing for some time, but then just came a point when I stopped feeling any meaning at all. I could create some platform in days or write an engaging, SEO-optimized article for my product site, but it just felt totally wrong. Now I code myself and only use AI when I need to learn something (for example, I've been self-hosting all my stuff recently and AI sometimes helped to understand important security-related things) and I feel like a craftsman now again. The same with writing, I started writing essays on my website and also for my email list without any means of making money this time and each sentence I write makes me happy, and when I'm done writing a piece, I feel accomplished, which is impossible to get when writing with AI.

That's nice, never heard of anyone using a keyboard for a phone. I use it for for my mac though and I can't imagine my life now without it, each typing feels liberating. Although, mac's keyboard is not bad either, it's just different. You basically can't get tired when typing mac's one because it doesn't require any effort clicking actually buttons.
