If they wanted to impress me with that video, the fork should have been made of the same hardened wood. Using the same geometry as the metal one.

Agree. A fork would be not only more impressive but (if possible) practical. That knife fell far short of an "effortless" cut.

According to the article, the process is basically about removing the lignin from the wood, not adding chemicals. The knife was coated in "food grade oil" to seal it, so I suspect there are no chemicals to worry about here.
